Natco fine semolina is sifted from the finest quality freshly milled Durum wheat, then ground to a super fine texture. Use it to make Indian puddings such as Suji Ka Halwa. Semolina is also a great ingredient for adding texture to food – coat meat or fish in a dusting of semolina, before frying, in place of plain white flour.
How to make semolina and almond halva
200h Natco fine semolina
150g ghee
150g sugar
600ml milk
50g ground almonds
2 tbsp ground cardamom
In a saucepan, pour in milk, sugar, cardamom and bring to the boil. Remove and set aside. In a saucepan, melt the ghee over a medium heat. Mix in the semolina and stir continuously for 7 minutes until lightly browned. Add ground almonds and stir for 30 seconds. Gently pour in the milk mixture, stirring for 4 minutes until it is thick and on the verge of turning solid. Transfer to a greased serving dish. Cut into pieces serve hot or cold. Serves 6-8.
